Well, today I've been baking. I'm on a quest to discover a healthy, tasty, simple-to-cook-even-in-our-tempremental-oven, that uses normal ingredients - too much to ask? Well...? I thought I would share the recipe that I made today - it is a very low fat, I think about 1-2 grams a muffin (if you're counting these things) and has a smidgen of sugar. It tastes quite nice (I use nice, as it is what it is, however if I was going to blow the budget, I'd just head straight on over to Joy the Baker, no doubt about. Even the description makes me drool, ok enough... back to health!) I adapted this recipe from All Recipes.
Bananarama Muffins (Makes 6)
- 1/2 cup flour (I used 1/4 cup plain, and 1/4 wholemeal flour)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup mashed banana (I just smushed up 2 small bananas, really not so fussed on measuring!)
- 2 tablespoons of sugar
- 2 tablespoons of low-fat vanilla yoghurt
- 1 egg
- 1/4 tsp vanilla extract
Preheat oven to 180C. Then very much the same as every other muffin recipe, combine wet ingredients and add to dry. Don't over mix - that bit always scares me! And then bake for 15-20mins. I baked mine for closer to 20, but I am paranoid about them not being cooked through. Yum.
I have just ordered some photos online so hopefully that pushes me into action scrap-wise. I love the latest challenges up at TAIF and Scrapjacked (although I agree with Mandi, the whole spraypaint situ is rather intimidating!) Anyways have a sweet week. x
